At that time, bakers in Champagne wanted to use the heat from their oven after the bread had been baked, so they came up with the idea of creating a special dough which, after being baked for the first time, was left in the bread oven to dry out. Hence the word BIS-CUIT, meaning baked twice.
BIS-CUIT is not one of those chains that sells downgraded products from previous seasons at reduced prices.
